5. Three Kinds of Danger, Sorted

A piece of broken glass in a salad, sanitizer sprayed near uncovered food, and norovirus carried into the kitchen by a sick employee are three very different problems. But all three are contamination hazards.

ServSafe sorts contaminants into three major categories: biological, chemical, and physical.

Knowing the difference isn’t just vocabulary. When something goes wrong in a kitchen, identifying the kind of hazard you’re dealing with helps you figure out what happened, where to look, and how to keep it from happening again.


Biological hazards include many of the pathogens responsible for foodborne illness and those categories get a LOT of attention in other posts.

On this post, I want to concentrate on the other two categories: chemical and physical hazards.

Chemical Hazards

Chemical contamination happens when something not meant to be in food โ€” a cleaner, sanitizer, pesticide, even hand lotion โ€” ends up in it.

The sources are more common in a working kitchen than you might expect:

  • Cleaners, sanitizers, polishes, machine lubricants, pesticides, and deodorizers
  • First-aid products
  • Health and beauty products staff bring in, such as hand lotion and hairspray

There’s also a less obvious chemical risk: the cookware and equipment itself. Some materials โ€” including pewter, zinc, certain painted pottery, and unlined copper โ€” can leach harmful substances into food. Acidic foods such as tomato sauce are especially important here.

That gorgeous vintage copper pot may belong on display rather than on the stove unless its food-contact surface is properly lined and approved for use.

Symptoms vary depending on the chemical involved. Chemical contamination can cause symptoms within minutes, and vomiting and diarrhea are common โ€” although the exact response depends on the chemical involved.

If someone may have eaten food contaminated with a chemical, don’t guess at the treatment. Get medical guidance immediately, and contact Poison Control or emergency services as appropriate.

Manager decisions that prevent chemical contamination:

  • Buy chemicals only from approved, reputable suppliers
  • Use only chemicals approved for use in foodservice operations
  • Store chemicals away from food and anything that will touch food โ€” including equipment, utensils, linens, and single-use items. Never store chemicals above them. A leaking bottle or tipped container should never have a path into food or onto a food-contact surface.
  • Use each chemical only for its intended purpose and follow the manufacturer’s directions
  • Use only equipment and utensils approved for foodservice
  • Keep chemicals in their original containers with the manufacturer’s label intact and readable
  • If chemicals are transferred to working containers such as spray bottles, label those containers properly
  • Dispose of chemicals according to the manufacturer’s directions and your local regulatory authority’s requirements

COMMON CONFUSION โ€” “It’s just cleaner residue. That’s not really contamination.”

It is.

Chemical contamination doesn’t require a dramatic spill. A spray bottle stored where it can leak onto food, sanitizer mixed incorrectly, or cleaner left on a food-contact surface can all create a chemical hazard.

The dangerous mistakes are often the ordinary-looking ones.

Physical Hazards

Physical contamination is the most literal hazard on this list: an object that shouldn’t be in the food, is.

Sources include:

  • Metal shavings, including pieces created by damaged or poorly maintained can openers
  • Wood, staples, glass, jewelry, dirt, fingernails, and bandages
  • Naturally occurring objects that can cause injury when they aren’t expected in the finished food, such as fruit pits or fish bones

The result can range from unpleasant to serious: cuts, dental damage, choking, bleeding, or pain. With a physical hazard, the injury usually happens when the contaminated food is eaten.

Manager decisions that prevent physical contamination:

  • Buy food from approved, reputable suppliers
  • Inspect food carefully when it’s received โ€” this is one of your best chances to catch a problem before it gets into the kitchen
  • Keep equipment in good condition. Damaged can openers, chipped dishware, and worn equipment can create physical hazards of their own.
  • Make sure employees follow good personal-hygiene and food-preparation practices. Jewelry, hair, fingernails, and bandages can all end up in food if they’re not properly controlled.
  • Handle cuts correctly. An uncovered wound can contaminate food biologically; an improperly secured bandage can become a physical hazard if it falls into food.

Putting the Three Together

The reason this sorting matters is that each category points you toward a different kind of prevention:

  • Biological: control time and temperature, personal hygiene, cross-contamination, and sourcing, depending on the pathogen or toxin involved.
  • Chemical: control storage, labeling, concentration, handling, and proper equipment use.
  • Physical: control sourcing, receiving, preparation, equipment condition, and employee practices.

Think about what that means in an actual kitchen.

A pot of soup held at an unsafe temperature? You’re looking for a biological problem.

Sanitizer accidentally sprayed onto uncovered food? Chemical.

A piece of a broken plastic scraper in the mashed potatoes? Physical.

Three different hazards. Three different places to start looking.


CLOSING SIDE WORK

No. You can’t save it.

There are actually two different hazards hiding in the same neglected piece of equipment.

The silver flecks are the first clue. A chipped or worn can-opener knife or drive gear can leave metal fragments in the food โ€” a physical hazard. And once those tomatoes have gone into the kettle, you can’t solve the problem by looking for the pieces or trying to strain them out. You don’t know what may have gotten into the food or when it happened.

Then there’s what the chef finds when she takes a closer look at the opener: old food and greasy buildup around the working parts. That’s a biological contamination concern. A can opener contacts the can and can transfer contamination as cans are opened. If it hasn’t been properly cleaned, every can run through it gives that contamination another opportunity to get where it doesn’t belong.

And that’s why the twenty gallons of sauce matter.

The problem didn’t start when somebody finally noticed the silver flecks. That’s just when somebody finally noticed the problem. If the same damaged, dirty opener was used on the tomatoes already in the kettle, you can’t establish that those earlier cans were safe just because nobody saw anything wrong with them.

Six cans of tomatoes are expensive. Twenty gallons of finished sauce are a lot more expensive. Add the other ingredients and the labor already invested, and throwing it away hurts.

But โ€œwe already spent a lot of money making itโ€ isn’t a food-safety control.

Discard the affected food, take the can opener out of service, clean and sanitize it properly, replace the damaged components, and inspect it before it goes back into use.

And maybe the bigger management lesson is the simplest one:

Nobody looks at the can opener until the can opener gives them a reason to look.
