No dish is worth serving if it isn’t safe to eat — and no kitchen is worth working in if the people in it aren’t protected.
Before a Wekiva Culinary student picks up a knife, they learn kitchen safety, first aid, and proper sanitation. This isn’t a one-time orientation; it’s revisited and reinforced throughout all four years, culminating in industry certifications — ServSafe and National Registry — that students carry with them into any commercial kitchen in the country. A full quarter of Culinary 1 is dedicated to this content alone, because we don’t consider a student “ready to cook” until they’ve mastered it.
This is also where professionalism gets built: hygiene standards, workplace communication, understanding OSHA and hazard communication requirements. Students leave this unit understanding that safety isn’t a rule imposed on the kitchen — it’s what makes a professional kitchen possible in the first place.
