Every recipe is a math problem happening at the same time as a science experiment — and every professional kitchen runs on both.
Culinary Math teaches students to scale a recipe from four servings to four hundred without breaking its ratios, calculate food cost and yield percentage, and convert between units on the fly — skills they’ll use immediately when catering a banquet or running Mustang Enterprises. Food Science asks the deeper question: why does that scaling work, why does an emulsion hold, why does yeast behave the way it does under different conditions.
This thread runs through the entire program — from Culinary 1’s portion control and standardized recipes, through Culinary 3’s costing and inventory work, to Culinary 4’s full restaurant management curriculum. Students who understand the math and the science behind their food are the ones who can run a kitchen, not just work in one.
