Baking and Pastry

Savory cooking forgives improvisation. Baking does not.

Baking and Pastry teaches students to work with precision — measuring by weight, understanding hydration percentages, respecting the exact temperature windows where gluten develops, sugar caramelizes, and leavening activates. It’s the most exacting discipline we teach, and that’s exactly the point: students who master pastry discipline bring that same precision back to everything else they cook.

The path runs from Culinary 1’s quick breads and basic yeast breads, through Culinary 2’s breakfast and starches units, into Culinary 3’s advanced yeast breads (brioche, sourdough) and full pastry program (custards, cakes, pies). It culminates in Culinary 4, where students work with laminated doughs, make chocolate from raw cacao, and craft gelato from scratch. Every stop along the way adds a new layer of technical control.
