This unit teaches the financial backbone of the industry: food costing, portion control, inventory and par-stock management, purchasing and receiving, and — as students advance — interpreting profit and loss statements and understanding what actually drives a restaurant’s bottom line. It starts in Culinary 1 with basic ordering and inventory concepts and builds steadily, culminating in Culinary 3 and 4, where students manage real inventory and real costs for Mustang Enterprises’ catering operations.
This is the unit that turns a talented cook into someone who could actually run a kitchen — or own one. Understanding the business side of food isn’t optional for a serious culinary career; it’s the difference between a hobby and a livelihood.
