Syllabus & Kitchen Safety Contract

Nobody really wants to read a 15 page syllabus. Nobody. And a 5 page kitchen safety contract on top of that? TLDR (too long, didn’t read).

Instructors write out all the rules about how students are graded, what they need to bring to class and whatnot so that there is a record and if someone complains about a grade they earned we can say “Look! It says right here what would happen!”

To make your life a little easier, here is a synopsis of the entire kitchen safety contract AND syllabus boiled into ten easy rules to follow: Chef Bates 10 Commandments For Getting an “A” 


Chef Bates 10 Commandments For Getting an “A” 

  1. COME TO SCHOOL

Students who miss more than 15% of class days will have a VERY hard time passing. 

Good Attendance = A’s 

  1. BE PREPARED TO COOK

25% – 50% of the entire course grade is based on performance in the kitchen. 

The day before you cook, review recipes, read your notes, or watch videos. Come prepared to be successful!

  1. BE ON TIME

Students get 3 additional minutes to prepare for class in addition to the 6 minute passing bell – after that, they are late and must get a pass. Late students may or may not cook at chef’s discretion. 

Get dressed, get in the kitchen, Let’s GO!

  1. UNIFORMS MATTER

Enter the kitchen fully dressed and ready to work; a clean chef coat, probe thermometer, sharpie, cooking shoes, and hair covering are REQUIRED to participate on cooking days; students out of uniform may or may not cook at chef’s discretion. Messy Coat, Messy Cook, Messy Food

  1. CLEAN AS YOU COOK

Don’t leave the kitchen messy for the next class. Ever. Leaving the kitchen dirty for the next class to clean up is an automatic 30% off.

NOTE: Students aren’t allowed to be absent or late to their FOLLOWING class to stay and clean up after THEIR own class.  Dirty Birds Get “C’s”

  1. WORK QUICK/ WORK SAFE

We have limited time to cook, clean, and eat – we have to work FAST and SAFE; if you don’t know how to help, ask chef for instructions. Standing around while other students are working is a sure way to get a failing grade. NOTE: Chef Bates won’t write passes to your next class because you worked slowly.

  1. MISSED DAYS AREN’T EXCUSED, THEY ARE MADE UP
  • MISS A LAB, MAKE A MOVIE

Absent SCHOOL cooks become YOUTUBE HOME cooks

Make up missed cooking days by recording yourself making the assigned recipe at home

  • MISS A PREP DAY OR GRADED DEMO, CLEAN THE KITCHEN 

Absent cooks clean floors

Make up missed prep days or missed cooking demonstrations by signing up for and then coming to the kitchen on Tuesdays for 90 minutes of intensive cleaning.

  1. CATERING IS PART OF YOUR GRADE

Sign up to help with afterschool and weekend catering events as often as you can; No one will work every event, everyone should try to. 

  1. STUDY FOR TESTS

Exams can be challenging; Do not assume you will be able to memorize everything you need to know during class. Studying on your own time is a must in this class.

  1. TURN IN ASSIGNMENTS ON TIME

CANVAS is set up to deduct 10% every day an assignment is late and does not accept anything 7 days after the due date; Don’t lose points for procrastinating! Those Zeroes add up fast!


Safety Contract

Safety in the kitchen comes first.

There are some things we don’t argue about – they simply are. One of those things is safety.

It is the job of the culinary instructors to keep our students safe while in the kitchen and working catered events. That means the rules which keep students safe are followed by everyone ABSOLUTELY, with NO ARGUMENT OR DISCUSSION.

Parents and students must sign this contract before entering the kitchen.
